We have soooo much to catch up on, I don’t even know where to start lol…I have been a cardio burning machine this weekend and I feel great! I am starting to think that my car being stolen might have been a blessing in disguise.
Eats and Workouts!
Friday…
For Lunch I had a bowl of Peanut Butter Puffins with FF Milk and also a bowl of Kix with FF Milk…sometimes a bowl of cereal is all you need lol
I then walked to my mom’s house with my sister (my niece rode her bike) and burned 241 Calories.
For din din my mommy made a traditional Dominican Good Friday Meal which consisted of Bacalao, Bacalaitos, Fried Fish, White Rice, Avocado, and for dessert she made Habichuela Con Dulce with Milk Cookies…everything tasted delish!
Later in the evening we walked back home and I burned another 173 Calories.
I ended up walking around 5 miles and jogged another 2! Not bad =)

Saturday…
For Breakfast I made myself a yummy bowl of Kashi Oats with PB and a Banana and my usual Cafe con Leche. It seems like FOREVER since I had a bowl of oats!
Lunch was Green Monster made with Silk Light Chocolate Soy Milk, Peanut Butter, Banana, Spinach, Chocolate Light Muscle Milk and Splenda.
I got two new DVD’s in the mail and could not wait to use them; Personal Training with Jackie which I have done on Exercise TV and just HAD to get (fabulous workout) and Jillian’s Yoga Melt Down. Exercise TV only has level 1 of Yoga Meltdown, so I was really excited to try Level 2.
Level 2 was just as challenging as Level 1 and I loved it! Especially since she had my favorite Yoga Pose “The Wheel” included in it! She actually made us do Wheel Pushups which I used to always do in my Yoga class and missed doing. I ended up burning 164 Calories in 30 minutes.
For Din Din I made myself Roasted Brussels Sprouts and Mushroom in EVOO, Salt, and Garlic and paired it with 2 Whole Wheat breadsticks that I made with Trader Joe’s Pizza Dough, Garlic, and Grated Parm Cheese, and a side of Trader Joe’s Eggplant Garlic Spread for dipping. Have you ever made your own Breadsticks? or anything else with Trader Joe’s Dough??? I need some recipes…

Sunday…
This morning I woke up and ate a Banana
And then headed outside for a workout!
- Walked 1 mile to the Park
- Walked .5 Miles in the Park to the Track
- Jogged 2 Miles around the Track
- Jogged another .5 Miles in the Park
And JUST when I was about to stop I made a new friend; this older gentleman named Gene. He started talking to me about the different trails in the park and my upcoming race (details below) and before I knew it, he talked me into jogging another 1.3 miles on the Horse Trail which was so amazing! It’s one thing to run on a track or on the concrete part of the park but to jog in the woods is a whole different experience…I am so happy that I met this man because I wouldn't have had the courage to go in there alone, I probably would have gotten lost lol…by the way THANK GOD that this didn’t turn into a Law & Order episode! What was I thinking going into the trail with a stranger? Thankfully he was not a creep…and I made it home safe and sound. In total I walked/jogged around 6 miles and ended up burning 1278 Calories in 2 hours and 15 minutes (including 1 Mile back home and Foam Roller Stretch) AND I got to see HORSES! WIN WIN!
For Breakfast I refueled with a Green Monster; this time with Spinach, Banana, Strawberries, Light Chocolate Soy Milk, Chocolate Light Muscle Milk, Coffee, and Splenda
Every Family has their own Holiday Traditions and for Easter my family usually goes to see a family movie in the theater followed by Italian Food from Lenny’s. Today we went to go see Alice in Wonderland in 3D and I loved it! I think Johnny Depp is so amazing in everything he does…he dives into the role and BECOMES the character!
I snacked on a Chocolate Peppermint Stick Luna Bar at the Movie Theater.
After the movie was done we picked up Linner. I had Calamari and Shrimp in Marinara Sauce and a side Salad with Creamy Italian Dressing
For dessert, I enjoyed a slice of Tiramisu yuuuuuums!

I successfully completed Lent! I did not have one single piece of meat or any Protein Cookie Dough!!!!! I think the fact that I dedicated this to my grandparents made it easier for me to resist the temptations. I am going to try to keep this going (not eating meat)…

Big Things Are Coming…
Remember when my car was stolen, I said “I woke up feeling hopeful because I was planning to do something very important that was supposed to change the course of my life but instead this happened and now I have to put that on pause”.
Well the big thing I was talking about was finally ordering my ACE Package so I can get my new Personal Training Certification. I was so upset that I had to put this on hold once again but with the help and advice from Jess, I decided to get a lower priced package…THANKS JESS!!!!!!! You have no idea how happy I was when the Fed Ex Driver dropped of my package!!!!!
I can not wait to start studying, I even cleaned out my study area lol

The best part of my desk are my “Hoops and Yoyo” Post It notes and their Panic Button that my friend Kim sent me…I love these two guys!
Race Details!
I signed up for another race in MAY! It is a 4 mile Road and Trail Race at the park that I run at…I can’t wait! I have a little over a month to train for it, so hopefully my body behaves and I don’t get any more injuries!
