What Have You Done Today…

Hello my loves! I hope you guys are having a great start to your week =). I have had a busy morning which started at 4:30 am for an IntenSati class…but let’s start off where we left off.

Friday afternoon I decided to try a Falafel mix that I picked up…

All I had to do was mix it with water and let it sit for 10 minutes…easy enough

I also got these new pans which I could not wait to try out…btw these babies were only 10 bucks for the whole set at Bed Bath & Beyond!

After 10 minutes, I rolled them into little balls and tossed them in the oven for 20 minutes and (flipped them half way through).

I paired them with a Whole Wheat Pita, Cracked Red Pepper Hummus, Reduced Fat Feta, Lettuce, and Tomatoes…

They were a little too strong for my taste buds…I ended up tossing the rest of the box out…I honestly think the black bean burgers that I make, taste better than this.

I am still in search for the mix that Gina recommended, I think it was called “Fantastic”.

I also snacked on 2 Chocolate and Banana protein muffins later in the evening (not pictured, battery was charging)

Saturday morning, I was rushing to get ready for the Pantry so I had a quick breakfast; Chocolate and Banana Protein Muffin with my usual (iced) Cafe con Leche

I stopped volunteering a little early because I signed my niece up for a Bike Riding Class! My mom picked me up around 9:30ish and then we went to get my sister and homefries.

When we arrived at the park, they removed her training wheels and pedals. They teach them how to walk and balance on their bike before they put the pedals back on.

I would love to tell you guys that she learned to ride her bike but unfortunately she didn’t…I asked one of the volunteers if all of the kids get it on their first try and he said “nope” so I didn’t feel so bad. Actually I am very proud of her…even though she did not learn…she did NOT give up! and did NOT have a meltdown, temper tantrum, etc. like some of the other kids. One little girl actually threw her bike in rage and said “IT IS TIME FOR US TO GO HOME! I AM DONE!”

After the park, I came home for lunch…I basically had the same thing from the day before but I replaced the Falafel with my Black Bean Burger.

Confession Time (1)…For din din I had Target Lemon and White Chocolate Shortbread cookies

On Sunday my plan was to go to an IntenSati class but my stomach was killing me, perhaps from all the cookies that I consumed the night before…I decided to skip the class =/

For Breakfast I made a Green Monster with Spinach, Blueberries, Chocolate LMM, FF Milk, and Splenda

For Lunch I had Lettuce, Tomato, 2 crumbled Black Bean Burgers, Reduced Fat Feta, and Cracked Red Pepper Hummus

Confession Time (2)…for din din I had Skinny Cow Ice cream…it was only 400 calories but obviously not the best dinner lol

All was NOT lost…I decided to do my IntenSati DVD since I didn’t make it to the class…it is not the same as being in the actual class but it was still good =)

This morning I woke up even before my alarm went off at 4:30…I was up by 4:20 reading emails. I showered, got dressed, and drank some coffee to wake myself up. I then headed to the Equinox by Columbus Circle for IntenSati. This is the first time that I took Darby’s class and it was a lot of fun. She started the class with the song “she’s a brick house” and that got my butt swaying lol. She even had us do the “Soul Train” line which sort of freaked me out because I am VERY shy but we got to go down the middle with a partner and everyone was clapping and cheering us on while we ran down; giving us high fives! I am sure we looked like idiots to the other people in the gym but I was in the moment lol. My favorite part of the class was the ending when we did stretching and she played the song from Biggest Loser “What have you done today to make you feel proud?” I think getting up at the crack of dawn to have a great workout is something to be proud of =) What have you done today to make YOU feel proud?

After class, I ran to the supermarket and then rushed home to do laundry.

I then cooked black beans to make some burgers…I enjoyed one for lunch with Part Skim String Cheese, Lettuce, slice of Tomato, Mayo and Ketchup Mix, in a Nature’s Pride Bun

I got my first birthday gift in the mail today from my friend Kim!!!!!

She sent me my first Vegetarian Cookbook!!!!!!

Until I looked close enough…it’s a Micro Scraper…this is perfect to scrape my PB JARS!

So today I am meeting a friend for din din that I have not seen in about 4 years…We had a falling out a few years back and stopped talking which sucked because we were friends since the 8th grade =/ She recently found my website and emailed me which caught me off guard because we did not leave things in the best of terms. We have been chatting via email for a couple of months and honestly it great to reconnect with her again…but I have to admit that I am a little nervous about tonight. Thankfully we are going to 5 Burros so the drinks will be flowing! haha
