I have a secret to tell you….I am not a big fan of raw carrots. Whenever I eat them, I make a really bad sour face and scare little children away lol. I know they are good for me so I am determined to include them in my diet.
I went online and starting to look for recipes for hummus so that I can pair it with the carrots and after looking and looking…I came up with
PEANUT BUTTER HUMMUS!
Ingredients
Can of Chickpeas
Extra Virgin Olive Oil
Salt to taste
2 tbsps of Creamy peanut butter
Lemon Juice to taste
tbsp or more of Minced Garlic
I didn’t take exact measurements but I promise you, it is really easy to make.
First I drained the can of chickpeas (poured liquid in cup to use later)
I then combined the Chickpeas and minced Garlic in a bowl
And made it nice it creamy…I used some of the reserved liquid from the can to help me smooth it out…
I then added peanut butter, salt, lemon juice (I used two lemons…I like it zesty), and EVOO
and mixed it all up together…
I chilled it in the fridge for a couple of hours and then enjoyed it with baby carrots…
It was deeeelish!!!! This would taste great with any veggie!
